  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Make the crust: In a medium bowl, combine gluten-free graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  3. Bake crust for 10 minutes. Remove from oven and set aside to cool.
  4. Make the filling: In a large bowl, beat cream cheese, 1 1/4 cups sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in sour cream and flour until just combined. Pour filling over crust.
