- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 2 cups shredded cooked chicken
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Optional toppings: avocado, tortilla chips, sour cream, extra cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, and jalapeño; cook until softened, about 5 minutes.
- Stir in cumin and chili powder; cook for 1 minute until fragrant.
- Add chicken broth and diced tomatoes (with juices). Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in shredded chicken and lime juice; cook for 2-3 minutes until heated through.
- Remove from heat and stir in cilantro. Season with salt and pepper to taste.
- Serve hot with desired toppings.
Notes
For a milder soup, remove the seeds from the jalapeño. For extra heat, leave the seeds in or add a pinch of cayenne pepper.
