Description

A comforting and hearty dish featuring tender chicken smothered in a rich garlic gravy, served over creamy cheesy mashed potatoes.


Ingredients

  • For the Chicken:
  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • For the Garlic Gravy:
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • For the Cheesy Mashed Potatoes:
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and black pepper, to taste

Instructions

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. Season chicken thighs with salt and pepper.
  3. 3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 5 minutes. Flip and cook 3 more minutes. Remove chicken and set aside.
  4. 4. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  5. 5. Sprinkle flour over the garlic and stir to create a roux. Cook for 1-2 minutes.
  6. 6. Gradually whisk in chicken broth, scraping up any browned bits. Bring to a simmer.
  7. 7. Stir in heavy cream and dried thyme. Season with salt and pepper.
  8. 8. Return chicken to the skillet, skin-side up. Transfer skillet to the oven and bake for 25-30 minutes, until chicken is cooked through and gravy has thickened.
  9. 9. While chicken bakes, prepare mashed potatoes: Place potatoes in a large pot and cover with salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain.
  10. 10. Mash potatoes with butter and milk until smooth. Stir in cheddar cheese until melted. Season with salt and pepper.
  11. 11. Serve chicken and garlic gravy over the cheesy mashed potatoes.

Notes

For extra richness, you can add a splash of white wine to the gravy before adding broth. Adjust cheese variety to your preference, such as Parmesan or Gouda.
