These chicken and avocado burritos are loaded with fresh herbs, creamy avocado, and tender chicken, making them a quick and satisfying meal perfect for busy weeknights.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 ripe avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh basil
  • 1/4 cup diced red onion
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1/2 cup sour cream (optional)

Instructions

  1. In a medium bowl, combine shredded chicken, diced avocado, cilantro, mint, basil, red onion, jalapeño (if using), and lime juice. Season with salt and pepper, and toss gently to combine.
  2. Warm the tortillas in a dry skillet or microwave until pliable.
  3. Divide the chicken-avocado mixture evenly among the tortillas, placing it in the center of each. Top with crumbled queso fresco and a dollop of sour cream (if using).
  4. Fold the sides of each tortilla over the filling, then roll tightly from the bottom to form a burrito.
  5. Serve immediately, or wrap in foil and warm in a skillet for a crispy exterior.

Notes

For a milder flavor, omit the jalapeño. You can also substitute Greek yogurt for sour cream.
