- 1 (16 ounce) package potato gnocchi
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Salt and black pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Bring a large pot of salted water to a boil. Cook gnocchi according to package directions until they float to the top (about 2-3 minutes). Drain and set aside.
- In a large skillet over medium heat, heat olive oil. Add minced garlic and red pepper flakes, cook for 1 minute until fragrant.
- Pour in heavy cream and broth, stirring to combine. Bring to a simmer, then reduce heat to low and stir in Parmesan cheese until melted and smooth. Season with salt and pepper.
- Add cooked gnocchi to the skillet and toss to coat in the sauce. Transfer to the prepared baking dish.
- Dollop ricotta cheese over the gnocchi, then sprinkle with mozzarella.
- Bake for 15-20 minutes, until bubbly and golden on top.
- Let rest for 5 minutes, then garnish with fresh basil or parsley if desired. Serve hot.
Notes
For a milder sauce, reduce or omit the red pepper flakes. You can also add cooked chicken or spinach for extra heartiness.
