- 4 ripe bananas
- 1 cup sugar
- 2 eggs, beaten
- 1 teaspoon vanilla
- 1/2 cup vegetable oil
- 2 cups flour, 1 cup can be whole wheat
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chopped walnuts, optional
Instructions
- Preheat oven to 350.
- Grease inside of a loaf pan with shortening.
- In a large bowl, mash bananas.
- In a separate bowl, beat eggs and then add to mashed bananas.
- Combine sugar and oil to the banana mixture.
- Stir together dry ingredients and add to banana mixture. Mix well. Add walnuts if desired.
- Pour into prepared loaf pan.
- Bake 50-60 minutes or until a toothpick inserted in center comes out clean.
