For the Stew:
- 4 boneless pork chops (or bone-in, if preferred)
- 6 medium potatoes, peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 cup frozen peas (optional)
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
1. Prepare the Ingredients:
- Peel and dice the potatoes into bite-sized pieces.
- Dice the onion and mince the garlic.
2. Layer the Slow Cooker:
- Add diced potatoes, onion, and garlic to the slow cooker.
- Season the pork chops with salt, pepper, garlic powder, onion powder, paprika, and dried thyme, then place them on top of the vegetables in the slow cooker.
3. Add the Broth:
- Pour chicken broth over the pork chops and vegetables. Stir to combine slightly, but keep the pork chops on top.
- Cover and cook on low for 6-7 hours, or high for 3-4 hours, until the pork chops are tender and the potatoes are cooked through.
4. Make it Creamy:
- Once the cooking time is up, remove the pork chops and set aside.
- Stir in heavy cream into the stew, then return the pork chops to the slow cooker.
- If you’re using frozen peas, add them in at this point and stir to combine. Cook for an additional 15-20 minutes until the peas are heated through and the sauce is creamy.
5. Serve & Enjoy:
- Remove the pork chops and serve on a plate with the creamy potato and vegetable stew.
- Garnish with fresh parsley before serving.
