  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 cup sliced mushrooms (cremini or button)
  • 1 cup uncooked wild rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the sliced mushrooms, wild rice, diced onion, and minced garlic.
  3. Pour in the chicken broth and heavy cream, then stir in the thyme, salt, and pepper.
  4. Dot the top with butter.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  6. Shred the chicken slightly with two forks before serving, if desired. Serve warm.

Notes

For a lighter version, substitute half-and-half for the heavy cream. Garnish with fresh parsley if desired.
