This Loaded Baked Potato & Pork Chop Skillet is an all-in-one meal that combines crispy, juicy pork chops with the comforting flavors of baked potatoes, cheese, bacon, and a creamy sauce. Perfect for a cozy dinner with minimal cleanup!


Ingredients

For the Pork Chops & Potatoes:

  • 4 boneless pork chops (or bone-in, if preferred)
  • 4 medium potatoes, peeled and diced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder

For the Loaded Topping:

  • 4 slices of cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tbsp chopped green onions (for garnish)
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)

For the Creamy Sauce:

 

  • 2 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

1. Cook the Pork Chops:

  1. Season the pork chops with salt, pepper, garlic powder, paprika, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the pork chops and sear for 3-4 minutes per side, until golden brown.
  4. Remove the pork chops from the skillet and set aside.

2. Cook the Potatoes:

  1. In the same skillet, add diced potatoes.
  2. Season with salt, pepper, and garlic powder.
  3. Cook, stirring occasionally, for 10-12 minutes, or until the potatoes are golden and cooked through. If needed, cover the skillet with a lid to help cook the potatoes faster.

3. Make the Creamy Sauce:

  1. Once the potatoes are cooked, move them to the side of the skillet and add butter to the empty space.
  2. Melt the butter, then stir in heavy cream, chicken broth, garlic powder, dried thyme, and Parmesan cheese.
  3. Let the sauce simmer for 2-3 minutes until it thickens.

4. Add the Pork Chops Back:

  1. Return the pork chops to the skillet, placing them on top of the potatoes.
  2. Spoon the creamy sauce over the pork chops and let everything cook together for an additional 5-7 minutes, until the pork chops are cooked through (internal temp should reach 165°F).

5. Top with Loaded Ingredients:

  1. Once the pork chops are cooked, top each with a spoonful of sour cream, a sprinkle of shredded cheddar cheese, crumbled bacon, and a dusting of Parmesan cheese.
  2. Garnish with chopped green onions.

6. Serve & Enjoy:
