For the Pork Chops & Potatoes:
- 4 boneless pork chops (or bone-in, if preferred)
- 4 medium potatoes, peeled and diced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp onion powder
For the Loaded Topping:
- 4 slices of cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tbsp chopped green onions (for garnish)
- 1/4 cup grated Parmesan cheese (optional for extra flavor)
For the Creamy Sauce:
- 2 tbsp unsalted butter
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
1. Cook the Pork Chops:
- Season the pork chops with salt, pepper, garlic powder, paprika, and onion powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add the pork chops and sear for 3-4 minutes per side, until golden brown.
- Remove the pork chops from the skillet and set aside.
2. Cook the Potatoes:
- In the same skillet, add diced potatoes.
- Season with salt, pepper, and garlic powder.
- Cook, stirring occasionally, for 10-12 minutes, or until the potatoes are golden and cooked through. If needed, cover the skillet with a lid to help cook the potatoes faster.
3. Make the Creamy Sauce:
- Once the potatoes are cooked, move them to the side of the skillet and add butter to the empty space.
- Melt the butter, then stir in heavy cream, chicken broth, garlic powder, dried thyme, and Parmesan cheese.
- Let the sauce simmer for 2-3 minutes until it thickens.
4. Add the Pork Chops Back:
- Return the pork chops to the skillet, placing them on top of the potatoes.
- Spoon the creamy sauce over the pork chops and let everything cook together for an additional 5-7 minutes, until the pork chops are cooked through (internal temp should reach 165°F).
5. Top with Loaded Ingredients:
- Once the pork chops are cooked, top each with a spoonful of sour cream, a sprinkle of shredded cheddar cheese, crumbled bacon, and a dusting of Parmesan cheese.
- Garnish with chopped green onions.
