- 1 cup sharp cheddar cheese, cubed
- 1/2 cup red onion, finely diced
- 1/4 cup fresh parsley, chopped
- For the dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- 1. In a large bowl, combine the thawed peas, cubed cheddar cheese, diced red onion, and chopped parsley.
- 2. In a separate small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, sugar, garlic powder, salt, and pepper until smooth.
- 3. Pour the dressing over the pea mixture and gently toss until all ingredients are evenly coated.
- 4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
- 5. Before serving, give the salad a gentle stir and adjust seasoning if needed. Garnish with additional parsley if desired.
Notes
For a lighter version, substitute Greek yogurt for the sour cream. This salad can be made up to 24 hours in advance – the flavors improve with time!
