For the Pork Chops & Potatoes:
- 4 bone-in or boneless pork chops
- 4 medium potatoes, peeled and thinly sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme (optional)
For the Creamy Garlic Parmesan Sauce:
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 2 tbsp unsalted butter
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional, for heat)
- Fresh parsley for garnish (optional)
Instructions
1. Preheat Oven & Prepare Casserole Dish:
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish or coat it with cooking spray.
2. Sear the Pork Chops:
- In a large skillet, heat olive oil over medium-high heat.
- Season the pork chops with salt, pepper, garlic powder, and onion powder.
- Sear the pork chops for 2-3 minutes per side until they are golden brown. They don’t need to be fully cooked at this stage; they’ll finish cooking in the oven.
- Remove the pork chops from the skillet and set them aside.
3. Prepare the Creamy Garlic Parmesan Sauce:
- In the same skillet, melt butter over medium heat.
- Add minced garlic and cook for 1 minute, until fragrant.
- Stir in heavy cream, Parmesan cheese, mozzarella cheese, garlic powder, Italian seasoning, and red pepper flakes (if using).
- Let the sauce simmer for 2-3 minutes, stirring occasionally until it thickens. Adjust the seasoning with salt and pepper to taste.
4. Assemble the Casserole:
- Spread thinly sliced potatoes evenly in the prepared baking dish.
- Pour the creamy garlic Parmesan sauce over the potatoes, making sure they are evenly covered.
- Place the seared pork chops on top of the potatoes.
5. Bake:
- Cover the baking dish with foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the pork chops reach an internal temperature of 165°F (75°C) and the potatoes are tender.
6. Serve & Enjoy:
- Let the casserole rest for 5 minutes before serving.
- Garnish with fresh parsley for a pop of color and flavor.
