For the Pork Chops & Potatoes:

  • 4 bone-in or boneless pork chops
  • 4 medium potatoes, peeled and thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme (optional)

For the Creamy Garlic Parmesan Sauce:

 

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional, for heat)
  • Fresh parsley for garnish (optional)

Instructions

1. Preheat Oven & Prepare Casserole Dish:

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish or coat it with cooking spray.

2. Sear the Pork Chops:

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season the pork chops with salt, pepper, garlic powder, and onion powder.
  3. Sear the pork chops for 2-3 minutes per side until they are golden brown. They don’t need to be fully cooked at this stage; they’ll finish cooking in the oven.
  4. Remove the pork chops from the skillet and set them aside.

3. Prepare the Creamy Garlic Parmesan Sauce:

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and cook for 1 minute, until fragrant.
  3. Stir in heavy cream, Parmesan cheese, mozzarella cheese, garlic powder, Italian seasoning, and red pepper flakes (if using).
  4. Let the sauce simmer for 2-3 minutes, stirring occasionally until it thickens. Adjust the seasoning with salt and pepper to taste.

4. Assemble the Casserole:

  1. Spread thinly sliced potatoes evenly in the prepared baking dish.
  2. Pour the creamy garlic Parmesan sauce over the potatoes, making sure they are evenly covered.
  3. Place the seared pork chops on top of the potatoes.

5. Bake:

  1. Cover the baking dish with foil and bake for 30 minutes.
  2. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the pork chops reach an internal temperature of 165°F (75°C) and the potatoes are tender.

6. Serve & Enjoy:

 

  1. Let the casserole rest for 5 minutes before serving.
  2. Garnish with fresh parsley for a pop of color and flavor.
