Description

Crispy Doritos-crusted chicken breasts stuffed with a creamy, savory filling of cream cheese, bacon, and cheddar cheese. A fun and indulgent dinner that’s sure to be a hit!

  • 1 1/2 lbs boneless, skinless chicken breasts (4 small or 2 large, butterflied)
  • 6 oz cream cheese, softened
  • 1/2 cup cooked bacon, crumbled (about 6 slices)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions (plus extra for garnish)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups crushed Doritos (classic nacho cheese flavor)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Cooking spray or oil, for baking

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, mix together softened cream cheese, crumbled bacon, shredded cheddar, green onions, garlic powder, onion powder, salt, and pepper until well combined.
  3. Butterfly each chicken breast: cut horizontally through the thickest part, being careful not to cut all the way through, to open like a book. Alternatively, you can cut a pocket in the side.
  4. Place a generous spoonful (about 2-3 tablespoons) of the cream cheese mixture into the center of each butterflied chicken breast. Fold the chicken over to enclose the filling, and secure with toothpicks if needed.
  5. Set up a breading station: place crushed Doritos in a shallow dish, flour in another shallow dish, and beaten eggs in a third.
  6. Dredge each stuffed chicken breast in flour, shaking off excess. Dip into beaten eggs, then press into the crushed Doritos, coating evenly on all sides.
  7. Place the coated chicken breasts onto the prepared baking sheet. Lightly spray the tops with cooking spray or brush with a little oil to help them crisp.
  8. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the coating is golden and crispy.
  9. Let rest for 5 minutes before serving. Garnish with extra chopped green onions if desired.

Notes

If you prefer, you can use any flavor of Doritos you like. For a spicier version, use Flamin’ Hot Doritos. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
