- For the Chicken:
- 1 lb boneless, skinless chicken breasts, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
- For the Sauce:
- 4 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Chopped parsley for garnish
Instructions
- Season the chicken slices with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, cook bacon until crispy. Remove and drain on paper towels, leaving some drippings.
- Add onion and garlic to the skillet and sauté until softened, about 2-3 minutes.
- Pour in chicken broth and heavy cream, scraping up any browned bits. Bring to a gentle simmer.
- Stir in Parmesan cheese and Italian seasoning until the sauce is smooth and slightly thickened, about 2-3 minutes.
- Add fresh spinach and stir until wilted, about 1-2 minutes.
- Return the chicken and bacon to the skillet, stirring to coat with the sauce. Simmer for 2-3 minutes until heated through.
- Garnish with parsley and serve hot.
Notes
For a lower-carb option, serve over zucchini noodles or cauliflower rice. You can also add mushrooms or sun-dried tomatoes for extra flavor.
