Description

This dish is a delicious twist on classic stuffed chicken, combining sweet apples and rich cheese in a creamy sauce. The chicken breasts are filled with a savory mixture of apples, cheese, and herbs, then pan-seared and finished in a creamy apple cider sauce. Perfect for a cozy dinner.

  • 4 boneless, skinless chicken breasts
  • 1 medium apple (such as Honeycrisp), finely chopped
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup apple cider
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine chopped apple, cheddar cheese, cream cheese, garlic, thyme, salt, and pepper. Mix well.
  3. Cut a pocket into each chicken breast horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the apple-cheese mixture, using toothpicks to secure if needed.
  5. Season the outside of the chicken with additional salt and pepper.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat.
  7. Sear the chicken breasts for 3-4 minutes per side, until golden brown.
  8. In a small bowl, whisk together apple cider, heavy cream, and Dijon mustard. Pour the mixture around the chicken in the skillet.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  10. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley before serving. Serve with the creamy sauce spooned over the top.

Notes

For best results, use a firm apple like Honeycrisp or Granny Smith to hold up during cooking. If you prefer a thinner sauce, add a splash of chicken broth. The stuffing can also be prepared ahead of time and refrigerated until ready to use.
