Description

These cranberry white chocolate blondie bars are chewy, buttery, and loaded with tart cranberries and sweet white chocolate. Perfect for holiday gatherings or any time you crave a delicious dessert bar.

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or foil, leaving overhang on two sides.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Whisk in flour, baking powder, and salt until just combined. Do not overmix.
  5. Fold in dried cranberries and white chocolate chips.
  6. Spread batter evenly into prepared pan.
  7. Bake for 25-30 minutes, until edges are golden and a toothpick inserted into the center comes out with moist crumbs (not wet batter).
  8. Cool completely in the pan on a wire rack. Lift out using parchment, then cut into bars.

Notes

For a festive twist, add a teaspoon of orange zest. Store bars in an airtight container at room temperature for up to 5 days.
