Description

These cranberry white chocolate blondie bars are chewy, buttery, and loaded with tart cranberries and sweet white chocolate. Perfect for holidays or any special occasion!

  • For the Blondie Base:
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup dried cranberries (or fresh, if preferred)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together melted butter and brown sugar until smooth.
  3. Add egg and vanilla, and whisk until well combined.
  4. Stir in flour, baking powder, and salt until just combined.
  5. Fold in white chocolate chips and cranberries.
  6. Spread batter evenly in the prepared pan.
  7. Bake for 22-25 minutes, or until a toothpick inserted comes out clean.
  8. Let cool completely before cutting into bars.

Notes

For a richer flavor, toast the white chocolate chips before adding to the batter. If using fresh cranberries, chop them coarsely and reduce to 1/3 cup.
