These cranberry white chocolate blondie bars are chewy, buttery, and loaded with tart cranberries and sweet white chocolate. Perfect for holidays or any special occasion!

- For the Blondie Base:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup white chocolate chips
- 1/2 cup dried cranberries (or fresh, if preferred)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together melted butter and brown sugar until smooth.
- Add egg and vanilla, and whisk until well combined.
- Stir in flour, baking powder, and salt until just combined.
- Fold in white chocolate chips and cranberries.
- Spread batter evenly in the prepared pan.
- Bake for 22-25 minutes, or until a toothpick inserted comes out clean.
- Let cool completely before cutting into bars.
Notes
For a richer flavor, toast the white chocolate chips before adding to the batter. If using fresh cranberries, chop them coarsely and reduce to 1/3 cup.
