Cranberry Chicken and Brie Bites – A 30-Minute French-Inspired Holiday Appetizer That Steals the Show
I’ll never forget my first holiday party as a newly-minted New York City caterer. The frost had barely melted off the High Line when my client asked for something “festive, impressive, and not too fussy.” I thought back to the flaky pastries I’d perfected in Paris and the sweet-tart preserves my mother would spoon over savory lamb in our kitchen in Morocco. That’s how these Cranberry Chicken and Brie Bites were born — a 30-minute puff pastry appetizer that marries French technique with the cozy flavors of an American holiday table. Honestly, they’ve been on my catering menu ever since.
When these puffs come out of the oven, the whole kitchen knows. The pastry crackles and whispers as it flakes, releasing a cloud of butter and toasted herbs. Beneath that golden, honeycombed crust, the Brie has melted into a silky, decadent pocket, while the whole-berry cranberry sauce glows ruby red and folds beautifully into the savory shredded chicken. There’s a touch of sweetness, a hint of tang, deep umami savoriness — and then that brilliantly creamy finish. Each bite-sized bundle is like a little gift: crunchy outside, tender inside, and gone in two delicious bites.
With my classical French pastry training and years spent in my mother’s Moroccan kitchen, I’ve learned that the best recipes are both technical and generous. These Cranberry Chicken and Brie Bites are exactly that — an easy holiday appetizer that feels anything but. In this post, I’ll share my trick for keeping the puff pastry crisp and never soggy, the assembly order that guarantees perfect results, and the one mistake I see home cooks make over and over: overfilling the pastry. With just 30 minutes, one sheet of store-bought puff pastry, and leftover chicken, you can create a showstopping appetizer that looks straight out of a French pâtisserie.
Why This 30-Minute Cranberry Chicken and Brie Bites Recipe Is the Best
The Flavor Secret: It all comes down to balance. The tangy whole-berry cranberry sauce cuts through the rich, buttery Brie, while the shredded chicken adds savory depth that keeps every bite interesting. This is the same flavor philosophy I learned in Paris — every great dish needs something sweet, something salty, something tart, and something creamy. Add a whisper of fresh thyme on top and you’ve got a Cranberry Brie Chicken Pastry bite that tastes far more complex than its simple ingredient list suggests.
Perfected Texture: From my French pastry days, I learned that puff pastry is all about steam. Each of those delicate layers contains butter that melts in the oven, turning to steam that lifts the dough into shatteringly flaky sheets. To protect that magic, we seal each bundle tightly, work with cold pastry, and bake hot so the layers set before any juice seeps through. The result? A crisp, golden shell that gives way to a molten, creamy center. That contrast — crunch and cream in the same mouthful — is pure Parisian technique applied to a casual American party favorite.
Foolproof & Fast: Despite how impressive these baked Brie puff pastry bites look, they’re genuinely beginner-friendly. You’re using store-bought puff pastry from the freezer case, leftover rotisserie chicken, a jar of cranberry sauce, and a wedge of Brie from the cheese aisle. There are no fancy tools, no tempering chocolate, no temperamental sauces — just 15 minutes of easy assembly and 15 minutes in the oven. If you can fold a paper airplane, you can fold these little bundles. That’s what makes this one of my favorite holiday appetizer recipes to share.
Cranberry Chicken and Brie Bites Ingredients
When I first moved to Manhattan, I discovered the joy of shopping for ingredients across the city. I grab a sheet of all-butter Dufour puff pastry from the freezer section at Whole Foods, a rotisserie chicken from the market on 9th Avenue, whole-berry cranberry sauce from the Union Square farmers market in the fall, and a round of Brie from Murray’s Cheese shop in Greenwich Village. It’s a little French-Moroccan-NYC mashup that always makes me smile — and it means every ingredient in this recipe is easy to find at a good American grocery store.
Ingredients List
- 1 sheet puff pastry, thawed (all-butter if you can find it)
- 1 cup cooked chicken, shredded
- ½ cup whole berry cranberry sauce
- 4 oz Brie cheese, rind removed, cut into small cubes
- 1 large egg, beaten (for egg wash)
- Fresh thyme leaves for garnish (optional)
Ingredient Spotlight
Puff Pastry: Puff pastry is the star of these puff pastry appetizers — its shatteringly crisp, buttery layers make every bite feel decadent. Look for all-butter puff pastry in the freezer aisle (Dufour and Trader Joe’s both make excellent versions); it costs a little more, but the flavor is night-and-day compared to pastries made with shortening. Whatever brand you choose, keep it chilled until the moment you’re ready to work with it.
Shredded Chicken: This is the quietly savory backbone of the filling. I prefer to use meat from a high-quality rotisserie chicken — it’s already seasoned, juicy, and effortless to shred, which makes this a true 30-minute recipe. Leftover poached chicken, turkey, or even a store-bought roasted bird also works beautifully. Just remember to pat the shreds dry with paper towels before mixing so the pastry stays crisp.
Brie Cheese: Brie is the soul of these Cranberry Chicken and Brie Bites — it melts into a luxurious, creamy pocket that contrasts perfectly with the tart cranberry and crispy pastry. When selecting Brie at the store, avoid wheels that are overly runny (the sign of an overripe cheese); instead, look for one that gives slightly when pressed. Removing the rind is essential for a smooth melt — it doesn’t melt evenly at high heat and leaves behind a chewy texture.
Cranberry Sauce: Whole-berry cranberry sauce is my secret weapon because it gives you two things at once: tangy, fruit-forward flavor and real cranberry texture. The berries burst as they bake, creating a jewel-like glaze over the chicken. Jellied sauce is sweeter and smoother but less interesting; homemade spiced cranberry sauce is a fantastic upgrade if you have a jar in your fridge.
| Original Ingredient | Best Substitution | Flavor / Texture Impact |
|---|---|---|
| Puff pastry | Phyllo dough sheets | Crisper and lighter, but less buttery and more delicate |
| Cooked chicken | Leftover holiday turkey | Richer, more festive flavor; perfect after Thanksgiving |
| Brie cheese | Camembert or cream cheese | Similar creamy melt; Camembert is earthier, cream cheese milder |
| Whole berry cranberry sauce | Fig jam or apricot jam | Fruitier and sweeter; less tang, different texture |
| Egg wash | Milk, cream, or melted butter | Less glossy and golden; butter adds richer flavor |
How to Make Cranberry Chicken and Brie Bites — Step-by-Step
This recipe is all about simple steps that produce a beautiful result, so take a breath and enjoy the process. The whole assembly takes about fifteen minutes — I promise it’s easier than it looks, and the payoff at the end is absolutely worth it.
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. I always keep the baking sheet close to the counter — and here’s a chef’s secret: pop it in the oven while it preheats. A hot pan gives the pastry an immediate bottom crust, so your Cranberry Chicken and Brie Bites brown evenly underneath.
💡 mia’s Pro Tip: Always use parchment paper or a silicone mat for puff pastry. Not only does it stop any sticking, it also means effortless cleanup on party day.
Step 2: Roll & Cut the Pastry
On a lightly floured surface, roll out the thawed puff pastry just enough to smooth the creases — about a 10×10-inch square. Then cut it into 12 equal squares, around 2½ inches each. If you prefer round bites, use a 2-inch round cutter. Try not to press too hard, because you want the layers to stay intact.
⚠️ Common Mistake to Avoid: Don’t over-roll puff pastry! Rolling it too thin or stretching it will collapse those precious layers. A gentle pass in each direction is all it needs.
Step 3: Mix the Filling
In a small bowl, stir the shredded chicken together with the half-cup of cranberry sauce until the chicken is evenly coated with that gorgeous ruby color. I like to leave a few whole cranberries visible in the filling for beautiful pops of texture in every bite of this baked Brie puff pastry appetizer.
💡 mia’s Pro Tip: Pat your shredded chicken dry with paper towels before mixing. Excess moisture from the chicken is the number one reason pastry bottoms turn soggy.
Step 4: Assemble the Bites
Spoon a small heaping teaspoon of the cranberry chicken mixture into the center of each pastry square. Top with one cube of Brie. Don’t worry if the filling isn’t perfectly centered — the Brie will act as the glue that holds everything together while it melts and bubbles in the oven.
⚠️ Common Mistake to Avoid: Resist the urge to overfill — it’s the #1 mistake I see. Too much filling means the bundles won’t seal, and the pastry will tear while baking. If your spoon is overflowing, it’s too much.
Step 5: Fold & Seal
Bring the corners of each pastry square up and over the filling, pinching the edges together firmly to form a neat little bundle. The pastry should meet in the center like a drawstring pouch, creating four distinct points on top. Place each bundle on the prepared baking sheet, seam-side up, with a little space between them so the steam can escape.
💡 mia’s Pro Tip: Press out any trapped air as you seal. Air pockets can cause the pastry to burst open in the oven, which looks fantastic for croissants but not so pretty for perfectly tidy Cranberry Chicken and Brie Bites.
Step 6: Egg Wash
Whisk the beaten egg with a teaspoon of water to loosen it up, then brush a thin, even coat over the tops of every bundle. This is what transforms pale pastry into that glossy, golden-brown masterpiece you see in bakery windows.
⚠️ Common Mistake to Avoid: Brushing on too much egg wash causes it to pool at the base of the bites and glue the pastry to the pan. A light touch is all you need — just a quick skim across the surface.
Step 7: Bake Until Golden
Bake for 12-15 minutes, until the pastries are puffed, deeply golden, and the Brie is visibly molten at the seams. Midway through, resist the temptation to open the oven — every time you do, you let out the steam that lifts those flaky layers.
💡 mia’s Pro Tip: Every oven is different. Start checking at 12 minutes — these puff pastry appetizers are done when the pastry is deep golden brown all over, not just pale on top. The bottoms should be crisp and nicely browned too.
Step 8: Cool, Garnish & Serve
Let the bites cool on the baking sheet for 3-5 minutes — just enough for the cheese to set slightly so you don’t burn the roof of your mouth. Transfer them to a serving platter and scatter fresh thyme leaves over the tops while they’re still warm so the herbs stick nicely.
⚠️ Common Mistake to Avoid: Don’t serve these straight out of the oven. Yes, they’re tantalizing, but molten Brie can be dangerously hot. A 5-minute rest lets the cheese settle into a creamy, pullable consistency that’s much safer and more satisfying.
| Step | Action | Duration | Key Visual Cue |
|---|---|---|---|
| 1 | Preheat oven & line sheet | 5 min | Parchment firmly placed |
| 2 | Roll & cut pastry | 5 min | 12 even squares |
| 3 | Mix chicken + cranberry | 2 min | Ruby-red coated filling |
| 4 | Assemble bites | 5 min | Filling centered on pastry |
| 5 | Fold & seal | 3 min | Pinched-tight bundles |
| 6 | Egg wash | 2 min | Glossy, even coating |
| 7 | Bake | 12–15 min | Golden brown & puffed |
| 8 | Cool & garnish | 3–5 min | Set but molten center |
Serving & Presentation
One of the joys of these Cranberry Chicken and Brie Bites is how effortlessly they make a spread feel special. I love arranging the warm bites on a round wooden board with sprigs of fresh rosemary scattered between them — the deep green against the golden pastry instantly says “holiday.” In my NYC apartment, they sit proudly next to a wheel of baked Camembert, a bowl of spiced olives, and some good crusty bread. For larger parties, I place them on a white ceramic platter with small dishes of extra cranberry sauce for dipping.
The flavor pairing opportunities are endless. These hot appetizers shine alongside roasted Brussels sprouts, a winter squash salad, or a bowl of creamy butternut soup. I also love serving them at a game-day spread, next to wings and sliders — they add an unexpectedly elegant touch that everyone reaches for first. For a French-Moroccan twist like my grandmother would appreciate, offer them with a dollop of yogurt-garlic dip or a drizzle of honey to echo the sweet-tart filling.
| Pairing Type | Suggestions | Why It Works |
|---|---|---|
| Side Dish | Roasted Brussels sprouts, butternut squash soup, mixed greens with apple vinaigrette | Earthy or bright sides balance the rich, sweet-savory filling |
| Sauce / Dip | Honey mustard, warm fig jam, whipped goat cheese dip | Adds a complementary sweet or tangy layer without overpowering |
| Beverage | Dry sparkling wine, crisp hard cider, pomegranate spritzer | The fizz and acidity cut right through the creamy Brie |
| Garnish | Fresh thyme leaves, pomegranate seeds, flaky sea salt | Adds color, texture, and a festive pop of flavor |
Make-Ahead, Storage & Reheating
As a busy NYC cook, I’m a huge fan of recipes that can be prepped and stored for later. These Cranberry Chicken and Brie Bites are a dream for entertaining: I’ll assemble the full batch on a Saturday afternoon, cover the tray tightly, and pop it in the fridge. Then on party day, I just brush on the egg wash and bake. It makes hosting feel completely effortless, and the pastry actually puffs even higher when it goes into the oven cold.
| Method | Container | Duration | Reheating Tip |
|---|---|---|---|
| Refrigerator | Airtight container with parchment between layers | Up to 3 days | Reheat at 350°F for 5–7 minutes until crisp |
| Freezer | Freeze on a tray, then transfer to a freezer-safe bag | Up to 2 months | Bake from frozen at 375°F for 10–12 minutes |
| Make-Ahead | Parchment-lined baking sheet, tightly covered | Up to 24 hours | Brush with egg wash and bake straight from the fridge |
When it comes to reheating leftovers, I have one golden rule: never use the microwave. Microwaving just reheats the moisture in the filling, which means the pastry turns soft, chewy, and sad. Instead, preheat your oven to 350°F, arrange the bites on a bare baking sheet with space between them, and warm for 5 to 7 minutes. They’ll crisp right back up, and the Brie will melt again into that luscious, creamy center. If you’re reheating from frozen, go straight to 375°F for 10-12 minutes — no thawing required.
I do want to flag one small caveat from my own catering experience: these festive puff pastry bites are at their absolute best within an hour of baking. The contrast between the shatteringly crisp shell and the molten Brie is most dramatic when they’re fresh from the oven. So if you’re hosting, bake them just before guests arrive, or batch-bake them and keep the first batch warm in a 200°F oven while the second batch finishes. They’ll hold beautifully for about 45 minutes.
Variations & Easy Swaps
This recipe is wonderfully adaptable, and I love playing with new combinations every season. Below are my three favorite variations — each one keeps the same simple assembly but gives you a completely different flavor story. Whether you’re cooking for a crowd with dietary restrictions or just want to use up Thanksgiving leftovers, there’s a version here for you.
| Variation | Key Change | Best For | Difficulty Impact |
|---|---|---|---|
| Moroccan Spice Twist | Add 1 tsp ras el hanout + chopped dried apricots | Adventurous palates, holiday gatherings | Easy |
| Gluten-Free & Dairy-Free | Use gluten-free puff pastry + dairy-free Brie alternative | Guests with dietary restrictions | Moderate |
| Thanksgiving Turkey Style | Swap chicken for leftover turkey + leftover cranberry | Holiday week leftovers | Easy |
Variation 1: Moroccan Spice Twist
This variation is pure nostalgia for me. Ras el hanout — literally “head of the shop” — is the warm, fragrant spice blend my mother would spoon from a copper tin in our kitchen in Fès. A single teaspoon melted into the chicken mixture transforms the flavor completely: cinnamon, cumin, ginger, and a whisper of floral sweetness dance around the cranberry and Brie. Add a few chopped dried apricots to the filling for extra texture and a touch of Moroccan souk energy. It’s still a 30-minute appetizer, but suddenly it tastes like a journey. If you can’t find ras el hanout, a pinch of cinnamon, cumin, and coriander will get you close.
Variation 2: Gluten-Free & Dairy-Free
I’ve tested this version for friends with dietary restrictions, and it honestly works beautifully. Swap the conventional puff pastry for a gluten-free puff pastry sheet — most major brands now make one that bakes up crisp and flaky, though it’s slightly more delicate to handle, so be gentle with the folding. For the cheese, use your favorite dairy-free Brie or a soft dairy-free cream cheese that melts well. The cranberry-chicken filling stays exactly the same, and the final result is an inclusive holiday appetizer recipe that lets everyone at the table enjoy a taste. Just don’t overfill, since the gluten-free pastry is a little less forgiving.
Variation 3: Thanksgiving Turkey Leftover Style
This is the version that saves you from the week of leftover turkey sandwiches — and I mean that as the highest compliment. Swap the shredded chicken for leftover roasted turkey and use whatever cranberry sauce survived the big meal, whether it’s whole berry, jellied, or a fancy orange-spiked chutney. Add a small pinch of fresh rosemary to the filling for that unmistakable holiday aroma. It’s the most natural Cranberry Chicken and Brie Bites spin imaginable, and it turns the day-after-Thanksgiving lunch into something guests will actually look forward to. Pro tip from my NYC catering days: this variation freezes even better than the original, since the turkey holds up beautifully.
How do you prevent puff pastry bites from getting soggy?
The key to keeping your puff pastry bites crisp is managing moisture at every single stage. First, pat your shredded chicken dry with paper towels so no extra liquid sneaks into the filling. Second, avoid overfilling — too much filling means the pastry can’t seal properly, and steam escapes into the layers instead of puffing them. Third, bake at a hot 400°F so the pastry sets quickly before the moisture from the chicken and cranberry sauce has time to soften it. Finally, always serve these within an hour of baking, or reheat them on a bare baking sheet in a hot oven to crisp the bottoms back up. Avoid the microwave — it turns the pastry into a chewy, rubbery mess.
Can I use a different type of cheese instead of brie?
Absolutely. Brie’s superpower here is its buttery, mild flavor and its ability to melt into that gorgeous creamy pocket — but it’s not the only cheese that can do the job. Camembert is the closest swap, with a similar texture and slightly earthier flavor. If you want a cheese with more attitude, try a triple-cream cheese or a young Port Salut. For a sharper contrast against the sweet cranberry sauce, you could use white cheddar, though the texture will be less ooey-gooey. A great dairy-free option is a plant-based Brie replacement, which melts beautifully enough for this recipe and lets guests with dietary restrictions enjoy these holiday appetizers too.
Can these cranberry chicken and brie bites be made ahead of time?
Yes, and this is one of my favorite party-day hacks. You can fully assemble these Cranberry Chicken and Brie Bites up to 24 hours in advance — just cover the baking sheet tightly with plastic wrap and refrigerate. When your guests are about to arrive, brush the egg wash over the chilled bites and pop them straight into the oven. The pastry actually puffs even better when it starts cold, so you get taller, flakier results. If you’re planning more than a day ahead, freeze the unbaked, unwashed bundles on a tray until firm, then transfer them to a freezer-safe container. Bake from frozen directly, simply adding a few extra minutes to the bake time.
What is the best way to reheat these puff pastry bites?
The best way to reheat leftover puff pastry bites is in the oven, never the microwave. Preheat your oven to 350°F, arrange the bites on a bare baking sheet with some space between them, and warm for 5 to 7 minutes until the pastry is crisp again and the Brie bubbles softly. For frozen bites, there’s no need to thaw first — bake them at 375°F for 10 to 12 minutes directly from frozen, and you’ll have crisp, melty bites that taste almost freshly baked. The microwave will only leave you with soggy, chewy pastry, so I strongly recommend taking the extra few minutes for the oven. Your taste buds will thank you.
Can I use store-bought rotisserie chicken for this recipe?
Absolutely, and I encourage it! Rotisserie chicken is a life-saver on busy days, and it’s what I recommend in the recipe notes. The meat is already juicy, well-seasoned, and effortless to shred — perfect for these puff pastry appetizers. Just be sure to remove the skin and any large pieces of fat before shredding, and this is important: pat the shredded chicken dry with a paper towel. The extra surface moisture from wet chicken is exactly what makes puff pastry soggy. My one indulgence is using white meat from the breast for a cleaner presentation, but dark meat adds even more rich, savory flavor if you prefer. Either way, this shortcut keeps the recipe truly 30 minutes.
Can I use homemade cranberry sauce or leftover cranberry chutney?
You absolutely can use homemade cranberry sauce, and if you’ve got jars of leftover cranberry chutney from the holidays, this is a wonderful way to use them up. Just be aware that texture matters. A whole-berry or lightly-chunky cranberry sauce gives these Cranberry Chicken and Brie Bites a lovely pop of fruit. If your homemade sauce is very loose or thin, simmer it on the stove for a few minutes to thicken it before using, so it doesn’t water out during baking. And if your chutney includes warm spices or orange zest, even better — those flavors pair beautifully with the creamy Brie and savory chicken. You might even like it more than the original.
Do I need to remove the rind from Brie before using it?
Yes, I recommend removing the rind for these bite-sized appetizers. While Brie rind is perfectly edible — and I always encourage eating it on a cheese board — in this context it doesn’t melt. It becomes soft and chewy, which can create a slightly rubbery texture inside the delicate puff pastry. To remove it easily, place the Brie in the freezer for 10 minutes until firm, then use a small paring knife to slice off the rind. You want clean cubes that will melt completely and uniformly into that luxurious, creamy pocket. If you’re in a rush, a sharp vegetable peeler also works nicely. This small step makes a big difference in the final texture.
Can I add extra ingredients to the filling?
Of course! This recipe is a wonderful blank canvas for your own touches. I love adding a pinch of red pepper flakes for a gentle kick, or a drizzle of honey if the cranberry sauce is very tart. Diced shallots sautéed until soft add a gentle sweetness, while chopped fresh rosemary or sage brings a wonderful holiday aroma. For a French twist, fold in a little crème fraîche to make the chicken extra luxurious and creamy. Just remember rule number one: whatever you add, keep the filling moist but not wet. The pastry needs to stay crisp, and too much liquid is its enemy. Keep additions small in volume, and these holiday appetizers will always bake up perfectly.
How many bites does one sheet of puff pastry make?
One standard sheet of puff pastry, which comes folded in a 9- or 10-inch square, makes 12 generous bite-sized bundles when cut into 12 squares, or 12 rounds if you use a 2-inch cutter. That’s the ideal number for a small gathering or cocktail party for six to eight people. If you’re hosting a larger party, simply double the recipe — store-bought puff pastry is inexpensive, and these Cranberry Chicken and Brie Bites always disappear fast. For larger, more substantial appetizer portions, you could cut the pastry into just 6 rectangles and fold them like classic turnovers, adding three to four minutes to the bake time. I always make extra so there are leftover bites for snacking at midnight.
What other holidays can I serve these for?
While these Cranberry Chicken and Brie Bites feel synonymous with Thanksgiving and Christmas, they’re wonderfully versatile for any celebration. The cranberry-chicken-Brie trio works beautifully for New Year’s Eve cocktail parties, Valentine’s Day gatherings (the cranberries look like little jewels), and even spring brunches when you swap the thyme for fresh chives. For the Fourth of July, use turkey and add a pinch of smoked paprika; for game-day Sundays, these disappear as fast as wings. Honestly, the festive red-and-gold look makes them feel special all year round. They’re one of those rare puff pastry appetizers that are equally at home on a holiday table, a brunch buffet, or a weeknight treat for no reason at all.
