Description

Juicy, smoky chicken skewers with a cowboy-inspired spice rub, perfect for grilling.


Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into 1 1/2-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cumin, chili powder, black pepper, salt, and cayenne pepper (if using).
  2. Add the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. If using wooden skewers, soak them in water for 20 minutes before grilling.
  4. Preheat grill to medium-high heat (about 375°F to 400°F).
  5. Thread the marinated chicken cubes onto skewers, dividing evenly.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until chicken is cooked through (internal temperature reaches 165°F) and has nice char marks.
  7. Remove from grill and let rest 2 minutes before serving.

Notes

For extra smoky flavor, add a handful of soaked wood chips to the grill. Serve with ranch dressing or barbecue sauce for dipping.
