Juicy, smoky chicken skewers with a cowboy-inspired spice rub, perfect for grilling.

- 2 lbs boneless skinless chicken breasts, cut into 1 1/2-inch cubes
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cumin, chili powder, black pepper, salt, and cayenne pepper (if using).
- Add the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- If using wooden skewers, soak them in water for 20 minutes before grilling.
- Preheat grill to medium-high heat (about 375°F to 400°F).
- Thread the marinated chicken cubes onto skewers, dividing evenly.
- Grill the skewers for 10-12 minutes, turning occasionally, until chicken is cooked through (internal temperature reaches 165°F) and has nice char marks.
- Remove from grill and let rest 2 minutes before serving.
Notes
For extra smoky flavor, add a handful of soaked wood chips to the grill. Serve with ranch dressing or barbecue sauce for dipping.
