- 1 medium onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup long-grain white rice
- 2 cups cooked shredded chicken
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a boil. Stir in rice, shredded chicken, thyme, and rosemary. Reduce heat to low, cover, and simmer for 15-20 minutes, until rice is tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
Notes
For a creamier soup, stir in 1/2 cup heavy cream at the end. You can also use leftover roast chicken or a rotisserie chicken.
