Description
A creative fusion of a classic Reuben sandwich and pizza, featuring corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing on a crispy crust.
Ingredients
Scale
- 1 pre-made pizza dough or homemade pizza dough
- 1/2 cup Thousand Island dressing
- 2 cups shredded Swiss cheese
- 8 oz thinly sliced corned beef, torn into pieces
- 1 cup sauerkraut, well-drained and squeezed dry
- 1/2 cup shredded mozzarella cheese (optional, for extra melt)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.
- Roll out the pizza dough on a floured surface to your desired thickness (12-14 inch round).
- Lightly oil a baking sheet or sprinkle with cornmeal. Transfer the dough to the baking sheet or pizza peel.
- Spread the Thousand Island dressing evenly over the dough, leaving a small border for the crust.
- Sprinkle half of the Swiss cheese over the dressing.
- Evenly distribute the corned beef pieces over the cheese.
- Scatter the drained sauerkraut over the corned beef.
- Top with the remaining Swiss cheese and optional mozzarella.
- Brush the crust edges with olive oil for a golden finish.
- Bake for 12-15 minutes, until the crust is golden and the cheese is bubbly and lightly browned.
- Let cool for 5 minutes, then slice and serve.
