Bite-sized pieces of French toast swirled with cinnamon and sugar, inspired by classic cinnamon rolls.

- 6 slices thick bread (such as brioche or Texas toast)
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- For the cinnamon sugar coating:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- For the cream cheese glaze (optional):
- 2 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- 1. Cut each slice of bread into 9 equal cubes (about 1-inch pieces). Set aside.
- 2. In a shallow bowl, whisk together eggs, milk, vanilla extract, 1 tablespoon sugar, and 1 teaspoon cinnamon until well combined.
- 3. In a separate small bowl, mix together the 1/4 cup sugar and 1 teaspoon cinnamon for the coating. Set aside.
- 4. Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon butter and let it melt.
- 5. Working in batches, dip bread cubes into the egg mixture, letting excess drip off, and place them in the skillet. Cook for 2-3 minutes per side, until golden brown and cooked through. Add remaining butter as needed.
- 6. As soon as the bites are cooked, toss them in the cinnamon sugar coating until well covered.
- 7. For the glaze: In a small bowl, beat cream cheese until smooth. Add powdered sugar, milk, and vanilla, and whisk until smooth and pourable. Drizzle over the bites if desired.
- 8. Serve warm, with extra glaze or syrup on the side.
Notes
For extra richness, use day-old brioche. The glaze can be omitted for a simpler version.
