A refreshing cold salad featuring tender dumplings, fresh basil, and a tangy balsamic dressing. Perfect for summer meals or as a unique side dish.

- 1 package (16 oz) frozen potstickers or gyoza (or homemade dumplings)
- 2 tablespoons vegetable oil
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup toasted pine nuts
- Optional: 1/4 cup crumbled feta cheese
Instructions
- 1. Cook the dumplings according to package directions. Drain and let cool completely. Once cool, refrigerate for at least 30 minutes or until chilled.
- 2. In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, Dijon mustard, salt, and pepper until emulsified.
- 3. In a large bowl, combine the chilled dumplings and chopped basil.
- 4. Pour the dressing over the dumplings and basil, tossing gently to coat.
- 5. If desired, sprinkle with toasted pine nuts and crumbled feta cheese. Serve cold.
Notes
For best flavor, let the salad marinate in the refrigerator for 30 minutes before serving. You can substitute store-bought balsamic glaze for a thicker, sweeter dressing. This salad is gluten-free if using gluten-free dumplings.
