Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 8 cups chicken broth
  • 1 1/2 cups pearl couscous
  • 2 cups cooked shredded chicken
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
  2. Add garlic, thyme, and oregano; cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in pearl couscous, reduce heat to medium-low, and simmer for 10-12 minutes until couscous is tender.
  5. Add shredded chicken and cook for another 2-3 minutes until heated through. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
