- For the Soup:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 2 cups shredded cooked chicken
- 1/4 cup fresh lime juice
- Salt and pepper to taste
- For the Cilantro Rice:
- 1 cup long-grain white rice
- 2 cups water
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 tablespoon butter or oil
- Salt to taste
- For Garnish:
- Sliced avocado
- Fresh cilantro leaves
- Lime wedges
Instructions
- Prepare the cilantro rice: In a saucepan, combine rice and water. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes until tender. Fluff with a fork, then stir in cilantro, lime juice, butter, and salt. Set aside.
- In a large pot, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, jalapeño, cumin, and oregano; cook for 1 minute.
- Pour in chicken broth and diced tomatoes (with juices). Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in shredded chicken and lime juice. Simmer for 5 minutes. Season with salt and pepper.
- Serve the soup in bowls with a scoop of cilantro rice. Garnish with avocado, cilantro, and lime wedges.
Notes
For a lighter version, use brown rice and adjust cooking time accordingly. Leftovers keep well in the refrigerator for up to 3 days.
