Ingredients

Scale
  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • For the Garlic Gravy:
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • For the Cheesy Mashed Potatoes:
  • 2 pounds russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken:
  2. 1. Season chicken breasts with salt, pepper, and garlic powder on both sides.
  3. 2. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  4. Prepare the Garlic Gravy:
  5. 3. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  6. 4. Whisk in flour and cook for 2 minutes, stirring constantly.
  7. 5. Gradually pour in chicken broth, whisking constantly to prevent lumps. Bring to a simmer and cook until thickened, about 3 minutes.
  8. 6. Stir in heavy cream and dried thyme. Season with salt and pepper to taste.
  9. 7. Return chicken to the skillet, spooning gravy over the top. Keep warm.
  10. Prepare the Cheesy Mashed Potatoes:
  11. 8. Place cubed potatoes in a large pot and cover with salted water. Bring to a boil and cook until tender, about 15 minutes.
  12. 9. Drain potatoes and return to the pot. Add butter and milk, then mash until smooth.
  13. 10. Stir in shredded cheddar cheese and sour cream until melted and well combined. Season with salt and pepper.
  14. Serve:
  15. 11. Serve the chicken and garlic gravy over a generous portion of cheesy mashed potatoes.

Notes

For extra flavor, you can add a splash of white wine to the gravy after cooking the garlic. The cheesy mashed potatoes can be made ahead and reheated gently.
