- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup milk
- 1 cup frozen or canned corn, drained
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add diced onion and cook until softened, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Stir in the rice and cook for 1-2 minutes, allowing it to toast slightly. Pour in chicken broth and milk, scraping up any browned bits from the bottom of the skillet. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-18 minutes, or until rice is tender and liquid is absorbed.
- Stir in the corn, Parmesan cheese, Italian seasoning, and cooked chicken. Cook for another 2-3 minutes until everything is heated through and the cheese is melted. Adjust seasoning with salt and pepper.
- Garnish with fresh parsley and serve immediately.
Notes
For extra creaminess, you can stir in a tablespoon of butter at the end. Substitute chicken with shrimp or tofu if desired.
