Description
Juicy chicken breasts smothered in a rich caramelized onion sauce and topped with melted cheese. A comforting, easy weeknight dinner.
Ingredients
Scale
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts (about 6 oz each)
- Salt and freshly ground black pepper, to taste
- 3 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup heavy cream
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 4 slices provolone or mozzarella cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for 5-7 minutes per side until golden brown and cooked through (internal temperature 165°F). Transfer to a plate and set aside.
- In the same skillet, reduce heat to medium. Add sliced onions and cook, stirring occasionally, for 20-25 minutes until deep golden brown and caramelized. Stir in minced garlic and cook for 1 minute more.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Stir in heavy cream and thyme. Simmer for 2-3 minutes until slightly thickened. Season with salt and pepper.
- Return chicken to the skillet, spooning the sauce over the top. Place one slice of cheese on each breast. Cover the skillet and cook for 2-3 minutes until cheese is melted. Serve immediately.
Notes
For extra melty cheese, use freshly sliced provolone. You can substitute Swiss or Gruyère for a different flavor. Serve with crusty bread or over pasta.
