- 4 boneless skinless chicken breasts
- 1 bunch fresh asparagus, trimmed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
Instructions
- Preheat oven to 400°F (200°C).
- Cut a pocket into each chicken breast horizontally, being careful not to cut all the way through.
- In a small bowl, combine mozzarella, Parmesan, garlic, salt, pepper, and Italian seasoning.
- Stuff each chicken breast with a few asparagus spears and the cheese mixture. Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden.
- Transfer skillet to the oven and bake for 20-25 minutes or until chicken is cooked through (internal temperature 165°F).
- Let rest for 5 minutes before serving.
Notes
For extra meltiness, add a slice of mozzarella on top during the last 5 minutes of baking. Pair with a side salad or rice.
