A fun and cheesy twist on tuna salad, served inside crispy onion rings.

- 1 large sweet onion, cut into 1/2-inch rings
- 2 (5 oz) cans tuna, drained and flaked
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
Instructions
- Separate onion rings. Use only the largest rings for stuffing; reserve smaller rings for another use.
- In a bowl, combine tuna, cheddar cheese, mayonnaise, parsley, salt, and pepper. Mix well.
- Stuff each onion ring with the tuna mixture, pressing gently to fill.
- Place flour, eggs, and panko in separate shallow bowls.
- Dredge each stuffed ring in flour, then dip in egg, then coat with panko.
- Heat 1 inch of oil in a deep skillet to 350°F (175°C).
- Fry rings in batches until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve warm.
