This Cheesy Ranch Pork Chop & Potato Bake combines tender, juicy pork chops with creamy, cheesy potatoes for a comforting, one-pan dinner that the whole family will love. The perfect meal for a busy weeknight, packed with flavor and minimal cleanup!

For the Pork Chops & Potatoes:

  • 4 boneless pork chops (or bone-in, if preferred)
  • 4 medium potatoes, peeled and thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme

For the Cheesy Ranch Sauce:

  • 1 (1 oz) packet ranch seasoning mix
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 2 tbsp unsalted butter, melted
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)

For Topping:

 

  • 1/4 cup crushed Ritz crackers or panko breadcrumbs (optional, for crunch)
  • 1/4 cup chopped green onions (for garnish)

Instructions

1. Preheat Oven & Prepare the Baking Dish:

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with cooking spray or olive oil.

2. Season the Pork Chops & Potatoes:

  1. Season the pork chops with salt, pepper, garlic powder, onion powder, paprika, and dried thyme.
  2. Toss sliced potatoes with olive oil, salt, and pepper until evenly coated.

3. Assemble the Bake:

  1. Layer the sliced potatoes evenly in the bottom of the prepared baking dish.
  2. Place the pork chops on top of the potatoes.

4. Make the Cheesy Ranch Sauce:

  1. In a bowl, combine the ranch seasoning mix, sour cream, shredded cheddar cheese, shredded mozzarella, milk, and melted butter. Stir until smooth.
  2. Pour the cheesy ranch sauce evenly over the pork chops and potatoes, making sure the sauce covers everything.

5. Bake:

  1. Cover the baking dish with foil and bake for 30 minutes.
  2. After 30 minutes, remove the foil, sprinkle the Parmesan cheese (if using) and crushed Ritz crackers or panko breadcrumbs on top.
  3. Return to the oven and bake uncovered for an additional 15-20 minutes, or until the pork chops are cooked through (165°F internal temperature) and the potatoes are tender.

6. Garnish & Serve:

 

  1. Remove from the oven and let rest for 5 minutes.
  2. Garnish with chopped green onions before serving.
