These cheesy ranch baby dutch potatoes are the ultimate comfort side dish—crispy on the outside, tender on the inside, and loaded with ranch and cheddar cheese.

- 1 1/2 pounds baby Dutch potatoes, halved
- 2 tablespoons olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss halved potatoes with olive oil and ranch seasoning until evenly coated.
- Arrange potatoes cut-side down on the prepared baking sheet in a single layer.
- Roast for 20-25 minutes, until golden and tender.
- Remove from oven and sprinkle with cheddar and Parmesan cheeses.
- Return to oven for 3-5 minutes, until cheese is melted.
- Garnish with parsley if desired and serve warm.
Notes
For extra crispy potatoes, flip halfway through roasting before adding cheese.
