- 2 large russet potatoes, peeled and grated
- 1 small onion, grated
- 1 cup shredded cheddar cheese (or any melting cheese)
- 2 large eggs, beaten
- 1/4 cup all-purpose flour (or matzo meal)

- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- Vegetable oil, for frying
- Sour cream or applesauce, for serving (optional)
Instructions
- Place the grated potatoes and onion in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible.
- In a large bowl, combine the squeezed potato-onion mixture, shredded cheese, beaten eggs, flour, salt, pepper, and garlic powder. Mix until well combined.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
- Drop spoonfuls of the potato mixture into the hot oil, flattening slightly with a spatula to form patties.
- Fry for 3-4 minutes per side, until golden brown and crispy. Drain on paper towels.
- Serve hot with sour cream or applesauce, if desired.
Notes
For extra crispy latkes, let the shredded potato mixture sit for 5 minutes after squeezing, then drain any excess liquid again. You can also use a combination of cheeses like Gruyère or mozzarella.
