For the Pork Chops & Potatoes:
- 4 bone-in or boneless pork chops
- 4 medium potatoes, peeled and thinly sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme (optional)
For the Cheesy Sauce:
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley (for garnish)
Instructions
1. Preheat Oven & Prepare Casserole Dish:
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
2. Sear the Pork Chops:
- In a large skillet, heat olive oil over medium-high heat.
- Season pork chops with salt, pepper, garlic powder, and onion powder.
- Sear pork chops for 2-3 minutes per side, just to get a nice golden color. Set aside.
3. Assemble the Casserole:
- Arrange the sliced potatoes in an even layer in the prepared baking dish.
- Place the seared pork chops on top of the potatoes.
- In a separate bowl, mix together cream of mushroom soup, milk, sour cream, Parmesan cheese, garlic powder, and 1/2 cup of shredded mozzarella and cheddar cheese. Stir until smooth.
- Pour the creamy sauce evenly over the pork chops and potatoes.
4. Bake:
- Cover the baking dish with foil and bake for 40 minutes.
- After 40 minutes, remove the foil and sprinkle the remaining cheddar and mozzarella cheese on top.
- Return to the oven and bake for an additional 15 minutes, until the cheese is melted and bubbly, and the pork chops reach an internal temperature of 165°F (75°C).
5. Serve & Enjoy:
- Let the casserole rest for 5 minutes before serving.
- Garnish with dried parsley for a touch of color and flavor.
