  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley (for garnish)

Instructions

1. Preheat Oven & Prepare Casserole Dish:

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.

2. Sear the Pork Chops:

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season pork chops with salt, pepper, garlic powder, and onion powder.
  3. Sear pork chops for 2-3 minutes per side, just to get a nice golden color. Set aside.

3. Assemble the Casserole:

  1. Arrange the sliced potatoes in an even layer in the prepared baking dish.
  2. Place the seared pork chops on top of the potatoes.
  3. In a separate bowl, mix together cream of mushroom soup, milk, sour cream, Parmesan cheese, garlic powder, and 1/2 cup of shredded mozzarella and cheddar cheese. Stir until smooth.
  4. Pour the creamy sauce evenly over the pork chops and potatoes.

4. Bake:

  1. Cover the baking dish with foil and bake for 40 minutes.
  2. After 40 minutes, remove the foil and sprinkle the remaining cheddar and mozzarella cheese on top.
  3. Return to the oven and bake for an additional 15 minutes, until the cheese is melted and bubbly, and the pork chops reach an internal temperature of 165°F (75°C).

5. Serve & Enjoy:

  1. Let the casserole rest for 5 minutes before serving.
  2. Garnish with dried parsley for a touch of color and flavor.
