- 1 tablespoon active dry yeast
- 1 tablespoon sugar
- 3 1/2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped pepperoni
- 1/4 cup baking soda
- 1 egg, beaten (for wash)
- Coarse sea salt for topping
- Marinara sauce for dipping
Instructions
- In a small bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until frothy.

- Cover dough and let rise in a warm place for 1 hour, until doubled.
- Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
- Punch down dough. Roll into a rectangle about 1/2 inch thick.
- Sprinkle mozzarella and pepperoni over dough. Roll tightly into a log.
- Cut log into 1-inch pieces. Pinch edges to seal.
- In a large pot, bring 6 cups water to a boil. Add baking soda (carefully, it will foam).
- Boil bites in batches for 30 seconds each. Remove with slotted spoon to prepared baking sheet.
- Brush with beaten egg and sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown. Serve warm with marinara.
Notes
For extra cheesy bites, use fresh mozzarella cubes instead of shredded. Pepperoni can be substituted with cooked Italian sausage or omitted for a vegetarian version. Store leftovers in an airtight container for up to 2 days; reheat in oven.
