Description
This cheesy mushroom chicken skillet is a creamy, comforting one-pan meal that’s perfect for busy weeknights. Tender chicken breasts are smothered in a rich mushroom sauce and topped with melted cheese.

- 4 boneless skinless chicken breasts
- salt and pepper to taste
- 2 tablespoons olive oil
- 8 oz cremini mushrooms sliced
- 3 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- fresh parsley for garnish
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5-6 minutes per side. Remove chicken and set aside.
- In the same skillet, add sliced mushrooms and cook until softened and browned, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in heavy cream and chicken broth, stirring to scrape up any browned bits from the bottom of the pan. Add dried thyme and bring to a simmer.
- Return chicken to the skillet. Spoon the mushroom sauce over the chicken.
- Sprinkle mozzarella and Parmesan cheeses evenly over the top.
- Cover the skillet and reduce heat to low. Cook for 10-15 minutes until chicken is cooked through and cheese is melted.
- Garnish with fresh parsley and serve hot.
Notes
For a lighter version, you can substitute half-and-half for the heavy cream. Add a splash of white wine for extra flavor.
