- 4 medium potatoes, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden and tender. Remove potatoes and set aside.
- In the same skillet, add ground beef and cook until browned, breaking it apart with a spoon.
- Add chopped onion and minced garlic, cook for 2-3 minutes until softened.
- Season with salt, pepper, and paprika. Stir well.
- Return potatoes to the skillet. Pour in beef broth and stir to combine.
- Sprinkle shredded cheddar cheese evenly over the top.
- Cover the skillet and let cook for 2-3 minutes until cheese is melted and bubbly.
- Remove from heat, garnish with fresh parsley if desired, and serve warm.
Notes
For extra flavor, try adding cooked bacon bits or a dollop of sour cream on top. You can also substitute ground turkey for a lighter version.
