  • 4 medium potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden and tender. Remove potatoes and set aside.
  3. In the same skillet, add ground beef and cook until browned, breaking it apart with a spoon.
  4. Add chopped onion and minced garlic, cook for 2-3 minutes until softened.
  5. Season with salt, pepper, and paprika. Stir well.
  6. Return potatoes to the skillet. Pour in beef broth and stir to combine.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Cover the skillet and let cook for 2-3 minutes until cheese is melted and bubbly.
  9. Remove from heat, garnish with fresh parsley if desired, and serve warm.

Notes
