Description

A hearty and cheesy cassoulet loaded with chicken, turkey sausage, and white beans, perfect for a comforting dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 package (13 ounces) smoked turkey sausage, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F.
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same skillet, add sausage and cook until browned, about 3-4 minutes. Remove and set aside.
  4. Add onion and garlic to skillet; cook until softened, about 2 minutes.
  5. Stir in white beans, diced tomatoes, thyme, salt, and pepper. Cook for 2 minutes.
  6. Return chicken and sausage to the skillet; stir to combine.
  7. Sprinkle cheddar and mozzarella cheeses evenly over the top.
  8. Transfer skillet to oven and bake for 20 minutes, until bubbly and cheese is melted and golden.
  9. Let stand 5 minutes before serving.

Notes

For a lighter version, use reduced-fat cheeses and turkey sausage. Serve with crusty bread or a green salad.
