  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 teaspoon brown sugar
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. 1. Season chicken breasts with salt and pepper on both sides.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. 3. In the same skillet, reduce heat to medium and add butter. Add sliced onions and cook, stirring occasionally, for 10 minutes until softened.
  4. 4. Stir in brown sugar and continue cooking onions for another 10-15 minutes until deep golden brown and caramelized.
  5. 5. Pour chicken broth into the skillet and scrape up any browned bits. Add thyme and rosemary, then return chicken to the skillet.
  6. 6. Top each chicken breast with mozzarella and Parmesan cheeses. Cover the skillet and cook for 2-3 minutes until cheese is melted.
  7. 7. Garnish with fresh parsley if desired and serve immediately.

Notes

For extra flavor, you can add a splash of balsamic vinegar to the onions during the last 5 minutes of caramelizing.
