- 1 large head cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 cups sourdough bread crumbs
- 2 tablespoons melted butter
- 1 tablespoon Dijon mustard
- 1 tablespoon whole grain mustard
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 5 minutes until just tender. Drain well and set aside.
- In a medium saucepan, melt 2 tablespoons butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk, stirring constantly until thickened, about 3-4 minutes.
- Remove from heat and stir in cheddar cheese, Parmesan, salt, pepper, and nutmeg until smooth.
- Arrange the cooked cauliflower in the prepared baking dish. Pour the cheese sauce evenly over the top.
- In a small bowl, combine sourdough bread crumbs, 2 tablespoons melted butter, Dijon mustard, and whole grain mustard. Mix until well coated.
- Sprinkle the mustardy crumb mixture over the cauliflower and cheese sauce.
- Bake for 20-25 minutes until the topping is golden and the sauce is bubbly.
- Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
