A warm and cheesy beef dip loaded with black beans and peppers, perfect for parties and game days.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook ground beef with onion and garlic until beef is browned and onion is translucent. Drain excess fat.
- Add diced red bell pepper and cook for 2-3 minutes until slightly softened.
- Stir in black beans, diced tomatoes, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
- Add cream cheese and stir until melted and well combined.
- Transfer mixture to a baking dish and top with shredded cheddar cheese.
- Bake for 15-20 minutes until cheese is bubbly and golden.
- Serve warm with tortilla chips.
Notes
Can be made ahead and refrigerated; bake just before serving. For a spicier dip, add jalapeños or use pepper jack cheese.
