For the Crust:

- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- For the Beef:
- 1 pound ground beef (80/20 blend)
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon mustard powder
- Salt and pepper to taste
- For the Cheese Sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 2 cups shredded cheddar cheese
- 1/4 teaspoon cayenne pepper (optional)
- For Toppings:
- 1 cup shredded lettuce
- 1 tomato, diced
- 1/4 cup diced pickles
- 1/4 cup diced red onion
- 1/4 cup ketchup
- 1/4 cup mustard
- 1/4 cup mayonnaise
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- 2. In a large bowl, toss tater tots with olive oil, garlic powder, and onion powder until evenly coated. Spread in a single layer on the prepared baking sheet.
- 3. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- 4. While tots bake, cook beef: In a skillet over medium heat, brown ground beef with onion and garlic until no pink remains (5-7 minutes). Drain excess fat.
- 5. Stir in Worcestershire sauce, paprika, mustard powder, salt, and pepper. Reduce heat to low and keep warm.
- 6. Make cheese sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Simmer for 2-3 minutes until thickened.
- 7. Remove from heat and stir in cheddar cheese until melted. Add cayenne if using.
- 8. Assemble: Arrange crispy tots on a platter. Top with beef mixture, drizzle with cheese sauce, then add lettuce, tomato, pickles, and red onion.
- 9. Serve immediately with ketchup, mustard, and mayonnaise on the side.
Notes
For extra crispiness, bake tots on a wire rack set over the baking sheet. Substitute ground turkey for a lighter option. Leftover cheese sauce can be refrigerated for 3 days (reheat with a splash of milk).
