- 1 lb ground beef
- 1 medium head cauliflower, riced (or 4 cups pre-riced cauliflower)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup chicken broth
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ¼ cup chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened, about 3 minutes.
- Add ground beef and cook until browned, breaking it apart. Drain excess fat.
- Stir in diced tomatoes, salt, pepper, and Italian seasoning. Simmer for 5 minutes.
- In a separate bowl, combine riced cauliflower, sour cream, and chicken broth. Spread evenly in the prepared dish.
- Spoon the beef mixture over the cauliflower layer. Top with shredded cheddar cheese.
- Bake for 20-25 minutes, until bubbly and cheese is melted. Garnish with parsley before serving.
Notes
For a dairy-free version, use dairy-free cheese and sour cream substitutes. Cauliflower rice can be made fresh or from frozen (thaw and drain excess moisture).
