- 3 tablespoons olive oil
- 3 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 4 cups (32 oz) vegetable broth
- 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
- 1 bunch kale, stems removed and leaves chopped
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced onions, salt, and pepper. Cook, stirring occasionally, for 25-30 minutes until deeply caramelized and golden brown.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in tomato paste, balsamic vinegar, dried thyme, and red pepper flakes. Cook for 2 minutes, stirring constantly.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add drained white beans and chopped kale. Cook for 5-10 minutes until kale is wilted and tender.
- Stir in lemon juice. Taste and adjust seasoning if needed. Serve hot.
Notes
For a thicker stew, mash some of the white beans before adding. Can be stored in the refrigerator for up to 5 days.
