These bite-sized phyllo cups are filled with sweet caramelized onions and melted cheese, making them an irresistible appetizer for any gathering.

- 2 large yellow onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 cup shredded Gruyère cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 package (1.9 ounces) frozen phyllo tart shells (15 shells)
- 1 tablespoon fresh thyme leaves (optional)
Instructions
- Preheat oven to 375°F (190°C). Arrange phyllo shells on a baking sheet.
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook, stirring occasionally, until softened and golden brown, about 20-25 minutes. Stir in sugar, salt, and pepper during the last 5 minutes.
- Remove from heat and let onions cool slightly. In a bowl, combine caramelized onions with Gruyère, mozzarella, and Parmesan cheeses.
- Spoon the onion-cheese mixture into each phyllo shell, filling generously.
- Bake for 8-10 minutes, until cheese is melted and edges are golden. Sprinkle with fresh thyme if desired. Serve warm.
Notes
These bites are best served fresh out of the oven. You can prepare the onion mixture up to a day ahead and refrigerate; bring to room temperature before assembling.
