  • 2 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 tablespoons balsamic vinegar
  • 1 pound potato gnocchi
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1 cup shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt butter with olive oil. Add the sliced onions, salt, pepper, and thyme. Cook, stirring occasionally, for 25–30 minutes until the onions are deeply caramelized and golden brown. Stir in balsamic vinegar and cook for 1 minute more.
  3. While onions cook, bring a large pot of salted water to a boil. Cook gnocchi according to package directions until they float to the top (about 2–3 minutes). Drain well.
  4. In a medium bowl, whisk together heavy cream and milk. Set aside.
  5. In a 9×13-inch baking dish, combine the cooked gnocchi, caramelized onions, and cream mixture. Stir gently to combine. Sprinkle the shredded Gruyère and Parmesan cheese evenly over the top.
  6. Bake for 20–25 minutes until the cheese is bubbly and golden brown. Let rest for 5 minutes before serving.
  7. Garnish with additional thyme or fresh parsley if desired. Serve warm.

Notes

For a vegetarian version, ensure the gnocchi and cheeses are vegetarian-friendly. The dish can be assembled ahead and refrigerated before baking; add 5–10 minutes to the baking time if chilled.
