- 1 sheet puff pastry, thawed
- 8 fresh figs, halved
- 1/4 cup honey
- 2 tablespoons butter
- 1/4 cup shelled pistachios, chopped
- 1 egg, beaten (for egg wash)
- 1 tablespoon brown sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

- Arrange caramelized figs cut-side up on the pastry within the scored border. Drizzle remaining pan syrup over figs.
- Sprinkle chopped pistachios over the figs.
- Bake for 18-22 minutes until pastry is golden and puffed.
- Cool on baking sheet for 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
For extra flavor, sprinkle with crumbled goat cheese before serving or drizzle with balsamic glaze. Can be made with other stone fruits like peaches or plums.
