A decadent appetizer featuring creamy brie wrapped in flaky puff pastry, filled with tangy lemon curd and fresh herbs, baked until golden and bubbly.

- 1 sheet frozen puff pastry (half of a 17.3-ounce package), thawed
- 1 (8-ounce) wheel of Brie cheese
- 1/4 cup lemon curd (store-bought or homemade)
- 2 tablespoons fresh mixed herbs (such as parsley, chives, and thyme), finely chopped
- 1 large egg, beaten (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry sheet to a 10-inch square.
- Place the Brie wheel in the center of the pastry. Spread lemon curd evenly over the top of the Brie, then sprinkle with fresh herbs.
- Fold the four corners of the pastry over the Brie, meeting in the center. Pinch the edges together to seal, forming a neat package. Brush the entire pastry with beaten egg.
- Place the pastry on the prepared baking sheet. Bake for 20–25 minutes, until the pastry is puffed and golden brown.
- Let cool for 5 minutes before serving. Serve warm.
Notes
For a richer flavor, add a teaspoon of honey to the lemon curd. Ensure the Brie is cold when wrapping for easier handling.
