For the Crust:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Food coloring (red, orange, yellow, green, blue, purple)

Instructions

1. Prepare the Crust:

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then add milk, vegetable oil, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter into 6 small bowls. Add a different food coloring to each bowl to create rainbow colors.
  6. Lightly grease the waffle iron. Pour small amounts of each colored batter onto the iron in rainbow order.
  7. Cook until golden brown and crisp, about 3-5 minutes. Repeat with remaining batter.
  8. Serve warm with syrup, whipped cream, or fresh fruit.

You can customize the seasonings to taste.
