For the Crust:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- Food coloring (red, orange, yellow, green, blue, purple)
Instructions
1. Prepare the Crust:
- Preheat your waffle iron according to manufacturer instructions.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add milk, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter into 6 small bowls. Add a different food coloring to each bowl to create rainbow colors.
- Lightly grease the waffle iron. Pour small amounts of each colored batter onto the iron in rainbow order.
- Cook until golden brown and crisp, about 3-5 minutes. Repeat with remaining batter.
- Serve warm with syrup, whipped cream, or fresh fruit.
