For the Crust:
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 3/4 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together pumpkin puree, oil, eggs, and sugar until smooth.
- In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually mix dry ingredients into wet ingredients until just combined. Fold in chocolate chips.
- Divide batter evenly among cupcake liners, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.
