For the Crust:

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 3/4 cup semi-sweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together pumpkin puree, oil, eggs, and sugar until smooth.
  3. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Fold in chocolate chips.
  5. Divide batter evenly among cupcake liners, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.
