A quick and easy beef stir-fry with tender snow peas and earthy mushrooms, perfect for a weeknight dinner.

- 1 lb beef sirloin, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 8 oz snow peas, trimmed
- 8 oz mushrooms, sliced
- 1/4 cup beef broth
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- In a bowl, toss beef slices with soy sauce and cornstarch. Set aside.
- Heat vegetable oil in a wok or large skillet over high heat. Add garlic and ginger, stir for 30 seconds.
- Add beef and stir-fry until browned, about 2-3 minutes. Remove beef from wok.
- Add snow peas and mushrooms to the wok, stir-fry for 2 minutes.
- Return beef to wok. Add beef broth, oyster sauce, and sesame oil. Cook for 1 minute, stirring.
- Season with salt and pepper. Serve immediately.
